If I were given the option to have a salad or something else, most of the time the something else wins. I like salads, but in my mind they just aren’t as filling. I am sure my stomach would say otherwise though.

Lately I feel like I’ve been needing a good healthy change when it comes to my eating. I still juice occasionally, but nothing like I used to. My plan is really simple; to eat fresh as much as possible and to cut back on fast food.

Today I threw together a yummy salad that I thought would be fun to share. Plus, it is dressing free! I hear most calories you gain from salads come from the dressing, so I chose to omit it and it was still so delicious!

Here is a list of the ingredients I used…

Spinach
Avocado
Mushrooms
Garbanzo Beans
Shredded Carrots
Strawberry Slices
Sunflower Seeds
Salt and Pepper

Just some notes: I didn’t measure anything. All I can tell you is I used half an avocado, three strawberries, and a small amount of salt (the sunflower seeds were already salted). And the bonus, zero dressing! It was so good!

Dinner Made Easy

I am all about simple meals that require little clean up. This veggie medley has become one of our favorites lately. Listen to how simple it is…

Gather some veggies. I used 4 red potatoes, a green bell pepper, 3 carrots, and a zucchini. The great thing about this meal is that you can add any vegetable you’d like.

Clean and chop all your vegetables.

Place them in a large bowl or baggie and season with salt, pepper, and garlic powder.

Drizzle a small amount of olive oil over the veggies and then mix it up.

Chop up a 13 oz. sausage link.

Spray your pan with olive oil and then add the vegetables and sausage.

Bake in the oven at 425° for 10 minutes. Mix your veggies and sausage and then cook for another 5-10 minutes. Be sure to check your potatoes and carrots to see if they are cooked all the way through. Once you can easily push your fork through them, your meal is ready!

We eat this just how it is and it is delicious! You could always add tortillas and make burritos or a wanna-be fajita. Enjoy!
