One of our favorite fast food places to eat is Chick-fil-A. Not only because of their great food but because they are kid friendly and very clean. Since we are trying to cut out a lot of fast food from our diet and also trying to pinch some pennies, we have decided to limit our visits to a few times a month vs. once a week or so. I know, I have a terrible addiction to this place.
Anyways, I decided to try out a baked chicken nugget recipe I found on Pinterest. Now, these aren’t nearly as greasy, delicious as the no. 5, but they are still pretty tasty. They are super simple to make and knowing that I am eating fewer calories is an added bonus.
Here is what you need:
Cut chicken into bite size cubes and then coat with olive oil. I used about 1 tablespoon for 1 extra-large chicken breast. I’d say as long as your chicken pieces get coated with oil, you are good.
Mix together the bread crumbs, parmesan cheese, and some salt and pepper. I am an eyeball-it kind of person. One who just dumps things together without any sort of measurements and that is what I did here. So I guess I’d say do a half cup bread crumbs, 2 tablespoons of parm cheese and a dash of salt and pepper.
Dip each chicken piece into the bread crumb mixture and then set on greased baking sheet.
Once all the nuggets are ready to bake, spray them with olive oil cooking spray. Bake at 425 degrees, 8 minutes on one side and then 5 on the other.
My little food critic approved of these baked nuggets and that is what matters most.
